Very easy recipe. It’s good for cleaning out the fridge. Pretty much anything goes in this one.

6 eggs
1/2 cup milk
1 cup cooked meat (bacon, sausage, chicken, salmon, ham, shrimp, chorizo*)
1 cup sauted veggies (mushrooms, bell peppers, tomatoes, onions, broccoli, spinach)
2 tablespoons fresh herbs (basil, oregano, dill, cilantro, parsley)
1 cup cheese (cheddar, jack, mozzarella, swiss, feta)
other (salsa, sour cream, hot sauce)

Preheat oven to 400 degrees. Butter the bottom and sides of a 9×9 baking dish or oven safe 12″ skillet. Mix together eggs, milk, salt and pepper. Pour into dish/skillet. All meat should be cooked, leftovers are great in this, and all veggies should be sauted so they are at least partally cooked since the cooking time for the eggs isn’t long enough to cook anything else in the mixture. Layer into the eggs the meat/veggies/herbs and cheese you want to add into the fritatta. Press ingredients into the eggs. Bake 15-18 minutes or until the center is almost cooked through. Let cool for 10 minutes and turn out of dish/skillet onto a cutting board and slice. Top with sour cream and maybe some fresh herbs or salsa.

Good combos:
~smoked salmon, spinach, jack cheese and dill
~sausage, peppers, mushrooms, onions, mozzarella cheese and oregano
~ham, broccoli, mushrooms, swiss cheese and parsley
~chorizo*, jack cheese, peppers, onions, tomatoes, salsa and cilantro
~shrimp, tomatoes, onions, feta cheese and basil
~chicken, tomatoes, spinach, cheddar cheese, basil, oregano and parsley
~peppers, onions, mushrooms, spinach, cheddar and jack cheese, parsley

*chorizo is a mexican sausage. I would recommend that you get the raw kind, squeeze a little out of the tube and cook in a separate skillet. It does fall apart some, not like regular pork sausage. Don’t drain the grease off and you might want to whisk it into the eggs before you put them in the dish to be baked.

Taco Salad

This one is simple to put together and pretty fast to make. The greatest part is you can add anything, meat, beans, cheese, whatever you want. And it’s a good way to use leftovers and to get a lot of veggies in your diet. These ingredients is just what I usually put into mine, you can add whatever you want. Tonight I’m going to add leftover tri-tip to the salad.

1 head of iceburg lettuce, sliced thin
1 carrot, grated
1 cucumber, diced
2 tomatoes, diced
1 green onion, sliced thin
1 cup shredded cheese
1 avocado, diced
2 cups meat diced (your choice)
1 can kidney or black beans, drained and rinsed
2 cups crushed tortilla chips
1 lime cut into wedges
1 cup sour cream
1 cup medium or hot salsa
hot sauce (optional)
cilantro leaves (optional)

In a LARGE bowl layer lettuce, carrot, cucumber, tomatoes, green onion, avocado, cheese, meat and beans. Divide into serving bowls, I usually get about 4 servings out of this amount of salad. Top each with tortilla chips and a lime wedge on the side. Mix together sour cream and salsa. Pour sauce mix onto salads. Top with cilantro leaves if you like and of course you can add extra hot sauce if you want it.

Quick Ham Bake

I was looking for something different and ran across a recipe that sounded good. I didn’t have all the ingredients so I decided to fake it, take the major flavor components and do it my way. It turned out pretty good, but it could have used one of the ingredients I didn’t have. So here is the recipe I made, with the missing ingredient.

Quick Ham Bake
16 ounces spiral pasta
2 cups diced ham
2 cups broccoli, cut into small pieces
1/2 cup roasted red bell pepper, diced
2 tablespoons flour
2 tablespoons butter
2 cups milk
1 jar alfredo sauce
1 cup parmesan cheese, grated
2 cups swiss or jack cheese, grated
fresh ground pepper

Preheat oven to 350. Spray two 9 x 9 baking pans with non-stick spray. Boil pasta until tender but not mushy. While pasta is draining melt butter in the pot used to boil the pasta. Add flour and stir together, cooking for 1 minute. Add milk and stir until it starts thickening. Turn off burner and add alfredo sauce and all the cheese. Add in the ham and broccoli and roasted red pepper. Stir together well and add pasta, stirring until it’s evenly mixed. Pour pasta mixture into baking pans and place in oven for 20 minutes. Let cool some before serving.
