Tonight’s dinner will be crab stuffed tilapia with asparagus, or at least I’m going to attempt it….here is the recipe I will be using.
***Update: Between being sick and having a major earthquake (and power outage) this dinner got put off for quite a while. I finally made it and took a pic….enjoy!***
Crab Stuffed Tilapia
1 pound tilapia fillets
1/2 cup shelled crab meat
1/4 cup panko bread crumbs
1/4 cup diced onion
2 Tablespoons minced fresh parsley
1 Tablespoon lemon juice
2 Tablespoons melted butter
1/8 teaspoon cayenne pepper
1/8 teaspoon paprika
Heat oven to 325. Place fish fillets flat on a cutting board and make a shallow cut partway through the fish keeping your knife parallel to the cutting board and making a pouch in the fish for the stuffing. Mix together crab, breadcrumbs, onion, parsley, lemon juice, butter and cayenne pepper. Gently stuff the mixture into the pouch in the fish and close with a tooth pick. Place stuffed fish into a baking pan that has been sprayed with non-stick cooking spray. Sprinkle paprika over fish. Bake for 20 minutes or until fish is firm and flakes but not over cooked.
