Potato Cheese Soup With Ham

Another variation of a recipe I found but since I changed a lot of it, I couldn’t help it, it used “processed cheese product”, I’m not even going to include the original recipe.

Potato Cheese Soup with Ham

8 red potatoes, cubed
water to cover
2 carrots, peeled and diced
3 stalks celery, diced
1 onion, diced
2 Tablespoons butter or vegetable oil
1 1/2 cups milk
salt and pepper to taste
1 1/2 cups chicken broth
1/2 pound extra sharp cheddar cheese, cubed
1 pound thick cut ham, diced small

Boil potatoes in water for 15 minutes in a large pot. Drain and set potatoes aside. Saute carrots, celery and onion in butter or oil until onions start to look translucent. Add potatoes to veggie mix with milk and chicken broth. Simmer until potatoes start to fall apart. Add cheese and ham, stirring frequently. Take off heat when cheese is about half melted and serve.
