Potato salad

Potato Salad Recipe
This recipe was given to me by my mom’s friend, it’s super simple and it’s soooo good that everyone asks for the recipe.

1 pound red or yellow skin potatoes
1/4 cup red wine or apple cider vinegar
1 teaspoon salt
1 teaspoon pepper
2 green onions sliced into rings (you can use red onion minced)
1-1 1/2 cup mayo

Put potatoes whole into a pot and cover with cold water and set to boil. You must start with cold water, otherwise they don’t turn out right. Let them boil until they are fork tender or the skins start to split. Drain and let the excess water dry off. Slice while still warm (you may want to use tongs to hold them with while you slice them) and put in a bowl and sprinkle with salt, pepper, green onions and vinegar. Let cool some and then put into the fridge until cold. Add mayo and mix, adding more mayo if it’s looking dry. You can cover and keep in the fridge for a while or serve then. Also, you can add anything to it you want, Bishop and Mom love it when I add crumbled bacon in it, I have tried adding less mayo and adding blue cheese and diced apples in it. It’s up to you, it’s a great base to add stuff in it or it’s excellent just like the recipe is written. One of our faves.
